I ‘ve seen that option “Make default” in Woocommerce post_type
Products” but actually not in generic “Posts”.

Simply navigate to categories, each category has the following options edit| quick edit|delete|view| MAKE DEFAULT. Click “make default” on any other category, this then becomes default. Then delete the category that was previously default, and you done.
